My most favorite BBQ Chicken in the whole world!

There are a few dishes that I loved growing up because I didn't eat spicy food until I turned 12! This BBQ chicken was one of them. Mom gave me this recipe years ago, but without the written proportions—consistent with all the recipes she gave me! Her instructions (in Thai) began with "Take two whole chickens," and after reading that first line, I folded the letter neatly and tucked it away so safely that I misplaced it for a while...because there were no recipe books in my kitchen either! (Like mother, like daughter!) 
 
Years have gone by, and two kids later, which still does not call for a two-chicken meal, but I've grown brave! And my daughter found Mom's letter! (Lucky you!) 
 
So, I worked out Mom's recipe that has been marinating in my head for decades and fully executed this brand-new class all in just a day. I hope you and your family will enjoy this BBQ chicken as much as I have over the years.
